The Art of Harvesting: When and How to Pick Your Oysters
## Timing is Everything
Harvesting your oyster mushrooms at the right time is crucial for quality. Harvest too early, and you sacrifice yield. Harvest too late, and the texture and shelf life suffer.
### Telltale Signs of Readiness
- **Cap Edge:** The primary indicator is the edge of the mushroom cap. When the caps are still slightly curled downwards, they are at their peak.
- **Flattening Caps:** If the caps have started to flatten out or turn upwards, they are past their prime. The mushroom is starting to release spores, which can reduce shelf life and trigger allergies in some people.
- **Size:** While size is a factor, the cap edge is a more reliable indicator. A cluster is ready when the largest caps are ready, even if smaller mushrooms (pins) are still present.
### The Harvesting Technique
1. **Grasp the Cluster:** Grab the entire cluster at its base, where it meets the substrate.
2. **Twist and Pull:** Gently twist and pull the cluster. It should detach cleanly from the substrate block. Avoid cutting with a knife if possible, as the remaining stump can be a site for contamination.
3. **Clean Up:** After harvesting, check the block for any small bits of mushroom left behind and remove them to keep the block clean for subsequent flushes.
Harvesting at the perfect moment ensures your mushrooms are delicious, store well, and present beautifully to customers.
